LouAna 100% Pure Coconut Oil Gives Your Favorite Meals a Healthy Twist

It can be used as straight 1 cup for 1 cup substitution for butter or margarine in your favorite recipes.
LouAna has also created several recipes designed specifically for use with their coconut oil. Here’s a tasty recipe for waffles that your kids are sure to love.
Whole-Wheat Citrus Waffles with Wild Blueberry Sauce
Make 5 to 6 waffles and 1 3/4 cups sauce
- 1 teaspoon LouAna 100% Pure Coconut Oil
- 1 tablespoon maple syrup
- 1 pound frozen wild blueberries
- 3 tablespoons lemon juice
- 1 tablespoon cornstarch
Waffles:
- 2 cups white whole-wheat flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons lemon zest
- 1/4 cup maple syrup
- 1 1/2 cups fat free milk
- 2 eggs
- 3 tablespoons LouAna 100% Pure Coconut Oil, melted
Instructions:
1. To make blueberry sauce, add 1 teaspoon LouAna 100% Pure Coconut Oil to medium saucepan and heat over medium high heat. Add maple syrup and cook for 1 minute until syrup begins to bubble. Stir in frozen blueberries and lemon juice and cook for about 10 minutes until blueberries are no longer frozen and sauce is hot. While blueberries are cooking, mash about 1/2 with the back of a large spoon to release some juice.
2. Remove about 1/4 cup blueberry juice and place in a small bowl. Gradually whisk in cornstarch until smooth paste is formed. Pour this mixture back into the blueberries and stir well. Bring to a boil and simmer for about 3-4 minutes until sauce has thickened. Remove sauce from heat and set aside until ready to serve.
3. To make waffles, in a large bowl mix together flour, baking powder, salt and lemon zest. In a medium bowl whisk together, maple syrup, milk and eggs. Stir this mixture into bowl with flour along with melted LouAna 100% Pure Coconut Oil. Follow instructions on your waffle maker to prepare waffles. Serve immediately with a serving of blueberry sauce.
