For me, nothing screams summer quite like ice cream. But, when you’re on a tight budget, taking the whole family out for ice cream gets expensive. So, I like to keep a few ice cream treats on hand for when we’re craving something sweet. One of my favorites is the Skinny Cow ice cream sandwiches.
At first, I almost passed up Skinny Cow just because of the name. I have enough body issues during the summer months as it is and “cow” is not really the word I want to be thinking about when I’m eating ice cream. But, with that minor complaint aside, Skinny Cow products really are quite good.
Each Skinny Cow ice cream sandwich has 140 calories, 1.5 grams of fat, and 3 grams of fiber. If you’re on Weight Watchers, they are worth 4 points. If you’re a fan of Hungry Girl, she often mentions Skinny Cow products in her books.
Skinny Cow actually makes several different kinds of ice cream sandwiches. They have mint, chocolate peanut butter, cookies and cream, and strawberry shortcake. I’m pretty traditional though and normally just get the chocolate and vanilla variety pack.
My son also loves eating these ice cream sandwiches, although they are so yummy it pains me to share. For him, I like Skinny Cow treats because they hold together well and don’t seem to turn into a soggy mess right away. He’s a slow eater and regular ice cream tends to melt all over my kitchen table when I give it to him.
