Weeknights with Giada is a newly released cookbook written with the premise that we moms are busy and can’t make a home cooked meal for our kids. I mean really, who’s busy? Not me. I mean, I know I have been making my pasta from scratch for years…{said as I remove easy mac from the pantry}…
In all seriousness, I have been searching for a solution to my lazy cooking ways for years and I am hopeful that the Weeknights with Giada cookbook will get me out of the nuggets for dinner again rut and leave my palette inspired at the same time.
The recipes look amazing!
And she claims they will be done, most of them in under 30 minutes. I will say that, at first glance, my oldest daughter who has been subjected to my lazy nugget ways will have to be convinced to eat some of these lovely and creative dishes, but I’m willing to give it my best.
Here is a list of some of the deliciousness she offers up in a short amount of time:
- Beef and Cannellini Bean Minestrone (Just over 30 minutes and most of the time it’s simmering. It’s 10 minutes of prep time)
- Grilled Cheese with Spinach and Pancetta (delish!)
- Grilled Pork and Fontina Sandwiches
- Carmelized Onion, Sausage and Basil Pizza
- Meditteranean Halibut Sandwiches
- Antipasto Calzone
- Smoked Mozzarella Pizza
I don’t know about you, but I would love this variety of flavor in little time within my home again….ok who am I kidding, we never really had this kind of flavor in my home on a regular basis.

And even if we don’t make this happen every night – because I would have to get my grocery list in proper order to see this through – I plan to have a better looking dinner plate some nights regardless.
As a side note, pick this book up on Amazon, otherwise, the $35.00 sticker price is a bit much. Even Target is pricey with it’s 20% off.
